  • 1 cup cherry tomatoes halved
  • 1 medium cucumber sliced
  • 1/4 medium red onion thinly sliced
  • 1/2 cup feta cheese or goat cheese
  • 1/4 cup toasted walnuts or pecans chopped and toasted
For the Dressing
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey or pure maple syrup for vegan option
  • 1/2 cup olive oil extra-virgin
  • salt to taste
  • freshly ground black pepper to taste

Method
 

Preparation
  1. Rinse the spring mix salad greens thoroughly under cold water. Dry well using a salad spinner.
  2. Layer halved cherry tomatoes, sliced cucumber, and thinly sliced red onion on top of the greens.
  3. Sprinkle crumbled feta cheese and toasted walnuts or pecans over the layered salad.
  4. In a dry skillet, toast chopped walnuts or pecans over medium heat for 1-2 minutes until fragrant.
  5. Whisk together balsamic vinegar, honey, and olive oil in a small bowl until glossy and slightly thickened.
  6. Drizzle the dressing over the salad and toss gently before serving.
