  • 1 whole fresh fish (snapper or tilapia) cleaned and scaled
  • 1 teaspoon salt for seasoning
  • to taste fresh cracked pepper
For the Sauce
  • 3-4 limes juiced
  • 4 cloves garlic minced
  • 1 piece lemongrass smashed and chopped
  • 1-2 bird's-eye chilies adjust for spice preference
  • 1 cup coconut milk
  • 1 teaspoon fish sauce high-quality Thai
  • 1 teaspoon sugar to taste
For Garnish
  • to taste fresh cilantro for garnish
  • to taste mint leaves optional
  • 1 lime slice for decoration
  • to taste extra chilies optional
  • 1 bulb roasted garlic optional

Method
 

Preparation
  1. Score the fish diagonally on each side and season with salt and pepper. Let it rest for 20 minutes.
Cooking
  1. Bring water to a boil in a large pot and prepare a steamer setup. Steam the fish for 8 to 12 minutes until cooked.
  2. Meanwhile, make the sauce by mixing lime juice, minced garlic, chopped lemongrass, coconut milk, fish sauce, and sugar in a bowl.
  3. Taste the sauce and adjust lime juice or sugar as needed.
Serving
  1. Transfer the steamed fish to a platter, drizzle with sauce, and garnish with cilantro, mint, lime, and chilies.
