Marination
- In a bowl, combine chicken thighs with minced garlic, soy sauce, white vinegar, bay leaves, and cracked peppercorns. Cover and marinate for at least 20 minutes or overnight for deeper flavor.
Searing
- Heat oil in a skillet over high heat and add marinated chicken thighs. Sear for about 1 minute on each side until golden brown.
Cooking Aromatics
- In the same skillet, sauté diced onion and remaining minced garlic for about 1.5 minutes until softened and fragrant.
Simmering
- Return the marinade, add water and brown sugar, stir, and let simmer. Add back the seared chicken thighs.
Thickening Sauce
- Simmer uncovered for 20-25 minutes, turning the thighs halfway through. Adjust sauce consistency as needed.
Serving
- Coat chicken in sauce and serve hot over rice or cauliflower rice. Garnish with green onions.
