For the Marinade

  • 1/2 cup White Vinegar Can substitute with rice wine or apple cider vinegar
  • 4 cloves Garlic Fresh minced garlic
  • 1 medium Onion Diced brown onion
  • 2 leaves Bay Leaves Fresh preferred
  • 1 teaspoon Peppercorns Whole or cracked
  • 2 tablespoons Brown Sugar Balances the tanginess
For Cooking
  • 1 tablespoon Oil Vegetable, canola, or peanut oil
For Garnish
  • 2 stalks Green Onion/Scallions Optional but recommended

Method
 

Marination
  1. In a bowl, combine chicken thighs with minced garlic, soy sauce, white vinegar, bay leaves, and cracked peppercorns. Cover and marinate for at least 20 minutes or overnight for deeper flavor.
Searing
  1. Heat oil in a skillet over high heat and add marinated chicken thighs. Sear for about 1 minute on each side until golden brown.
Cooking Aromatics
  1. In the same skillet, sauté diced onion and remaining minced garlic for about 1.5 minutes until softened and fragrant.
Simmering
  1. Return the marinade, add water and brown sugar, stir, and let simmer. Add back the seared chicken thighs.
Thickening Sauce
  1. Simmer uncovered for 20-25 minutes, turning the thighs halfway through. Adjust sauce consistency as needed.
Serving
  1. Coat chicken in sauce and serve hot over rice or cauliflower rice. Garnish with green onions.
