For the Filling
  • 400 grams Cream cheese Swap in Neufchâtel cheese for lower fat content.
  • 200 grams Sour cream (35% fat) Full-fat Greek yogurt is a great substitution.
  • 100 ml Heavy cream Use whipping cream if preferred.
  • 150 ml Pineapple juice Orange juice can be used as a delightful replacement.
  • 100 grams Sugar Adjust to your taste preference.
  • 5 sheets Gelatin sheets Powdered gelatin can be used in a 1:4 ratio.
  • 1 tablespoon Lemon Lime juice can be swapped for a citrusy twist.

Method
 

Step-by-Step Instructions
  1. Prepare the jello layers by dissolving each jello powder in boiling water and chilling in separate molds overnight until fully set.
  2. Create the biscuit base by crushing the digestive biscuits and mixing with melted butter and brown sugar, then press into a lined springform pan.
  3. Dissolve gelatin sheets in cold water, then combine with boiling pineapple juice and sugar until fully dissolved. Allow to cool.
  4. Prepare the cream cheese filling by whisking together sour cream, heavy cream, and cream cheese until fluffy, then mix in the cooled pineapple juice and lemon juice.
  5. Fold the diced jello into the cream cheese filling, then pour over the biscuit crust and refrigerate for at least four hours until set.
  6. Serve the Terrazzo Cheesecake by removing from the springform pan, slicing, and garnishing as desired.
