Cooking Steps
  1. Peel and cut the sweet potato into small cubes. In a non-stick pan, heat a drizzle of olive oil over medium heat, then add the sweet potato cubes along with your Cajun spice mix. Sauté for 10-12 minutes until the edges are golden brown and the cubes are fork-tender, yet remain slightly firm.
  2. Once sautéed, remove the sweet potatoes from the heat and let cool for a few minutes. Transfer to a blender. Add chickpeas, garlic, scallions, cilantro, tomato purée, and miso paste if using.
  3. Blend the mixture on low until well combined, ensuring to leave some texture for a hearty bite.
  4. Transfer the blended mixture to a bowl and use your hands to form it into four equally sized patties.
  5. In the same pan, heat more olive oil over medium heat. Once hot, carefully add the formed Sweet Potato Burgers. Cook for about 2-3 minutes on each side.
  6. Once cooked, remove the sweet potato burgers from the pan and place them on a toasted burger bun. Top with your favorite toppings.

Notes
