Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (204°C) and line a large casserole dish with aluminum foil.
  2. Spread the thinly sliced shallots and half of the whole garlic cloves in the casserole dish.
  3. Drizzle the olive oil over the chicken pieces and season with salt and pepper. Place chicken skin-side up atop shallots and add remaining garlic cloves.
  4. Pour chicken broth and white wine around the chicken, ensuring not to pour over it directly.
  5. Roast the chicken uncovered for about 1 hour until golden brown and internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for a few minutes before serving and spoon the pan juices over it.
