- Spread the thinly sliced shallots and half of the whole garlic cloves in the casserole dish.
- Drizzle the olive oil over the chicken pieces and season with salt and pepper. Place chicken skin-side up atop shallots and add remaining garlic cloves.
- Pour chicken broth and white wine around the chicken, ensuring not to pour over it directly.
- Roast the chicken uncovered for about 1 hour until golden brown and internal temperature reaches 165°F (74°C).
