Method
 

Step-by-Step Instructions
  1. Soak wooden skewers in water for 10-20 minutes to prevent burning on the grill.
  2. In a medium bowl, combine soy sauce, water, mirin, brown sugar, and vinegar to create your marinade.
  3. Mix minced garlic, ginger, ground pepper, and 1/4 cup of marinade; add chicken and marinate for at least 10 minutes.
  4. Pour remaining marinade into a saucepan, bring to a boil, and mix cornstarch with 2 tablespoons of boiling marinade.
  5. Thread marinated chicken onto skewers and grill for 8-12 minutes, turning occasionally and brushing with sauce.
