Step-by-Step Instructions for Creamy Salmon Pasta
  1. Bring a large pot of salted water to a rolling boil. Add 8 ounces of your favorite pasta and cook according to package instructions until al dente, about 10 minutes. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat for about 1-2 minutes until shimmering.
  3. Add 6 ounces of salmon to the skillet and cook (fresh for about 5 minutes, or canned for 2-3 minutes) until tender and flaky.
  4. Stir in 1 cup of cottage cheese and 1/4 cup of Parmesan cheese into the skillet, cooking for 3-4 minutes until melted into a creamy sauce.
  5. Add the drained pasta and 1/2 cup of fresh spinach to the skillet, gently tossing to combine. Cook for an additional 2-3 minutes until spinach wilts.
  6. Taste and adjust seasoning if needed. Serve immediately, garnished with 2 tablespoons of fresh herbs.
