Step‑by‑Step Instructions
  1. In a large bowl, combine the ground chicken, finely chopped onion, minced garlic, and fresh parsley. Sprinkle in the ground cumin, ground coriander, salt, and black pepper. Mix until well-combined and slightly sticky.
  2. Shape the mixture into small oval koftas, about the size of a golf ball, and place on a plate or baking sheet.
  3. Preheat your grill to medium-high heat, around 400°F (200°C), and brush grill grates with olive oil.
  4. Grill the koftas for about 10-12 minutes, turning occasionally until golden brown and cooked through (internal temperature of 165°F).
  5. In a separate bowl, combine the plain yogurt, lemon juice, and a pinch of salt. Stir until smooth and creamy.
  6. Serve the koftas warm with the garlic yogurt sauce on the side, with warm pita or fresh salad.
