Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then cut into 1-inch cubes. Toss with olive oil, paprika, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes, stirring halfway through.
  4. While the sweet potatoes roast, heat a skillet over medium heat with olive oil. Cook the seasoned chicken breast for 6-8 minutes on each side.
  5. Cook the brown rice according to package instructions, about 30-40 minutes.
  6. In a small bowl, whisk together tahini, water, and lemon juice to make the drizzle.
  7. Assemble the bowl with rice, followed by sweet potatoes and sliced chicken. Drizzle with tahini sauce.
  8. Serve warm and enjoy!
