Method
 

Crepe Preparation
  1. In a mixing bowl, whisk together the milk, flour, and eggs until the batter is smooth. Let it rest for 15 minutes.
  2. Preheat a non-stick skillet over medium heat for about 2 minutes. Grease the skillet lightly.
  3. Pour a ladleful of batter into the skillet, tilting to coat. Cook for 1-2 minutes until edges lift, flip and cook until golden.
  4. In the same skillet, sauté spinach over medium heat for 2 minutes. Add scrambled eggs and cheese, mix until combined.
  5. Take a crepe, add the filling in the center, fold, and serve warm with optional toppings.
