Directions
  1. In a large pot, add 1 tablespoon of sesame oil and heat over medium heat until shimmering, about 1-2 minutes.
  2. Add 3 cloves of minced garlic and 1 tablespoon of grated ginger to the pot. Sauté for about 1 minute until fragrant.
  3. Pour in 6 cups of chicken or vegetable broth, stirring to combine. Bring the mixture to a rolling boil, which should take about 3-4 minutes.
  4. Stir in 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, and 1 tablespoon of chili paste if desired. Simmer for another minute.
  5. Reduce heat and add 1 pound of frozen potstickers. Cook for about 4-6 minutes until tender.
  6. Stir in 1 cup of sliced mushrooms and simmer for an additional 2 minutes.
  7. Gently fold in 1 cup of baby spinach, stirring until wilted, about 1 minute.
  8. Season to taste with salt and pepper.
  9. Ladle soup into bowls and garnish with sliced green onions and fresh cilantro.
