Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large, oven-safe skillet, heat olive oil over medium-high heat. Season chicken thighs with salt and pepper, sear skin-side down for 5-7 minutes until golden brown.
  3. Remove chicken from skillet. Add red onions and Honeycrisp apples to residual oil. Sauté for about 3-4 minutes until softened.
  4. Pour in apple cider and chicken broth or white wine. Stir in Dijon mustard and minced garlic. Simmer for about 5 minutes.
  5. Return chicken to skillet, ladle sauce over them, and roast in the oven for 25-30 minutes until cooked through.
  6. Remove chicken from the oven. For a thicker sauce, place skillet on stovetop and reduce the sauce further. Serve warm.
