Making the Pudding
- Juice the Oranges. Squeeze juice from three mandarin oranges, or measure out three tablespoons from a regular orange.
- Combine the Mixture. In a mason jar, combine orange juice, coconut milk, chia seeds, maple syrup, and vanilla. Stir well.
- Allow to Sit. Let the mixture rest for about five minutes.
- Chill to Thicken. Seal and place in refrigerator for at least two hours.
- Top and Serve. Once set, stir and spoon into bowls. Top with Greek yogurt and mandarin slices.
- Add Optional Toppings. Grate orange zest and sprinkle coconut flakes on top.
