Ingredients
  

For the Pudding
  • 3 tablespoons Fresh Orange Juice from mandarin oranges
  • 1 cup Coconut Milk or almond milk for a lighter option
  • 1/4 cup Chia Seeds thickens the pudding
  • 2 tablespoons Maple Syrup or honey if not vegan
  • 1 teaspoon Vanilla Extract pure vanilla recommended
For the Toppings
  • 1/2 cup Greek Yogurt or dairy-free yogurt for vegan option
  • 1/2 cup Mandarin Orange Slices fresh
  • 1 teaspoon Orange Zest optional
  • 1/4 cup Coconut Flakes optional

Method
 

Making the Pudding
  1. Juice the Oranges. Squeeze juice from three mandarin oranges, or measure out three tablespoons from a regular orange.
  2. Combine the Mixture. In a mason jar, combine orange juice, coconut milk, chia seeds, maple syrup, and vanilla. Stir well.
  3. Allow to Sit. Let the mixture rest for about five minutes.
  4. Chill to Thicken. Seal and place in refrigerator for at least two hours.
  5. Top and Serve. Once set, stir and spoon into bowls. Top with Greek yogurt and mandarin slices.
  6. Add Optional Toppings. Grate orange zest and sprinkle coconut flakes on top.
