Step-by-Step Instructions
  1. Scrub the russet potatoes under cool running water and pat them dry. Prick each potato several times with a fork.
  2. Pour 1 cup of cold water into the Instant Pot and insert the metal trivet.
  3. Place the prepared russet potatoes on top of the trivet and close the Instant Pot lid securely.
  4. Select the manual or pressure cook function and set the cooking time. (12 minutes for small, 16 for medium, 20 for large potatoes.)
  5. After cooking, let the pressure release naturally for 10 minutes before switching to venting.
  6. For crispy skins, transfer potatoes to a baking sheet, brush with olive oil, and sprinkle with kosher salt. Broil for 3-7 minutes.
  7. Serve the potatoes warm with your favorite toppings.
