- Scrub the russet potatoes under cool running water and pat them dry. Prick each potato several times with a fork.
- Pour 1 cup of cold water into the Instant Pot and insert the metal trivet.
- Place the prepared russet potatoes on top of the trivet and close the Instant Pot lid securely.
- Select the manual or pressure cook function and set the cooking time. (12 minutes for small, 16 for medium, 20 for large potatoes.)
- After cooking, let the pressure release naturally for 10 minutes before switching to venting.
- For crispy skins, transfer potatoes to a baking sheet, brush with olive oil, and sprinkle with kosher salt. Broil for 3-7 minutes.
