- In a large mixing bowl, scoop in 2 cups of plain Greek yogurt and 1/2 cup of natural peanut butter. Add 1 teaspoon of vanilla extract. Blend vigorously for 2-3 minutes until smooth.
- If desired, drizzle in 2 tablespoons of honey or maple syrup and mix for another minute, adjusting sweetness as needed.
- Pour the mixture into a loaf pan and smooth the top with a spatula.
- Cover tightly with foil or a lid and place in the freezer for at least 4 hours or overnight.
- Once fully frozen, remove from the freezer and let sit for 5-10 minutes if too hard to scoop.
- Serve into bowls or cones and enjoy, optionally garnishing with fresh fruit or granola.
