Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and line a 3lb loaf tin with parchment paper.
  2. In a large bowl, whisk together oil or melted butter with granulated and light brown sugars until smooth.
  3. Add eggs and vanilla extract, whisk until just combined, avoiding overmixing.
  4. Sift in flour, bicarbonate of soda, and salt. Fold gently with a spatula, then add mashed bananas.
  5. In a separate bowl, melt unsalted butter, then mix in dark brown sugar, granulated sugar, and cinnamon to form a paste.
  6. Layer batter and swirl mixture in the loaf tin, swirling gently but not overmixing.
  7. Bake in preheated oven for 50-65 minutes or until a toothpick comes out with a few moist crumbs.
  8. Cool in the tin for an hour, then transfer to a cooling rack and allow to cool completely.
