- Preheat your oven to 180°C (350°F) and line a 3lb loaf tin with parchment paper.
- In a large bowl, whisk together oil or melted butter with granulated and light brown sugars until smooth.
- Add eggs and vanilla extract, whisk until just combined, avoiding overmixing.
- Sift in flour, bicarbonate of soda, and salt. Fold gently with a spatula, then add mashed bananas.
- In a separate bowl, melt unsalted butter, then mix in dark brown sugar, granulated sugar, and cinnamon to form a paste.
- Layer batter and swirl mixture in the loaf tin, swirling gently but not overmixing.
- Bake in preheated oven for 50-65 minutes or until a toothpick comes out with a few moist crumbs.
- Cool in the tin for an hour, then transfer to a cooling rack and allow to cool completely.
