- Begin by pouring 1 cup of heavy whipping cream into a large mixing bowl. Using a hand mixer, beat the cream on medium speed until it thickens, adding 1 cup of powdered sugar, 1 teaspoon of pure vanilla extract, and 1 teaspoon of mint extract. Continue mixing until the whipped cream reaches stiff peaks, about 3-5 minutes. Set aside gently to maintain its airy texture.
- In a separate bowl, add 8 ounces of softened cream cheese and beat with a hand mixer on medium speed for about 2-3 minutes or until fluffy and smooth.
- Carefully fold the whipped cream mixture into the cream cheese using a spatula. Start by adding a scoop of whipped cream to lighten the cream cheese, then gently combine the two mixtures until no streaks remain.
- Introduce a few drops of mint green food coloring to the dip, stirring gently until the color is even. Fold in 3/4 cup of mini chocolate chips.
