Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (177°C) and prepare a mini muffin pan by greasing it lightly with coconut oil or using mini muffin liners.
  2. In a medium bowl, whisk together the melted coconut oil, dairy-free milk, applesauce, and vanilla extract until smooth.
  3. In a large bowl, combine the gluten-free flour blend, baking powder, salt, organic cane sugar, and spices.
  4. Pour the wet ingredients into the dry mixture and stir gently. Fold in the diced apples.
  5. Fill each muffin cup about 3/4 full with batter.
  6. Bake in the oven for 9–11 minutes or until a toothpick comes out clean.
  7. Allow muffins to cool in the pan for 10 minutes, then transfer to a wire rack.
  8. Mix together melted coconut oil, organic sugar, and ground cinnamon. Coat each muffin top in the mixture.
