  • 1 cup Ricotta Cheese or part-skim/cottage cheese for a lighter option
  • 1/2 cup Parmesan Cheese can use Pecorino Romano as an alternative
  • 1 large Egg for brushing tops; use plant-based milk for vegan
  • 1 teaspoon Garlic Powder fresh minced garlic can be used
  • to taste Salt & Pepper essential seasonings
  • 1 tablespoon Olive Oil optional for sautéing spinach

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. In a skillet, heat olive oil over medium heat and sauté chopped spinach for about 3-4 minutes until wilted. Let cool.
  3. In a mixing bowl, combine cooled spinach, ricotta cheese, grated Parmesan, garlic powder, salt, and pepper. Mix until smooth.
  4. Roll out thawed puff pastry sheets on a floured surface and cut into 4-6 squares.
  5. Place 1-2 tablespoons of the spinach mixture in the center of each square, fold and seal the edges.
  6. Brush the tops of the pastries with beaten egg or plant-based milk, if vegan.
  7. Bake on the lined baking sheet for 20-25 minutes until golden brown.
  8. Let cool for 5 minutes before serving with tzatziki or marinara sauce.

Notes
