Preparation Steps
- Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
- In a skillet, heat olive oil over medium heat and sauté chopped spinach for about 3-4 minutes until wilted. Let cool.
- In a mixing bowl, combine cooled spinach, ricotta cheese, grated Parmesan, garlic powder, salt, and pepper. Mix until smooth.
- Roll out thawed puff pastry sheets on a floured surface and cut into 4-6 squares.
- Place 1-2 tablespoons of the spinach mixture in the center of each square, fold and seal the edges.
- Brush the tops of the pastries with beaten egg or plant-based milk, if vegan.
- Bake on the lined baking sheet for 20-25 minutes until golden brown.
- Let cool for 5 minutes before serving with tzatziki or marinara sauce.
