Batter
  • 2 cups all-purpose flour
  • 2 teaspoons instant yeast
  • 2 tablespoons sugar brown sugar optional
  • 1 teaspoon coarse kosher salt sea salt is an alternative
  • 1 cup lukewarm water
Filling
  • 4 sticks mozzarella cheese or other cheese sticks
  • 4 pieces hot dogs turkey or vegetarian options are great
Frying
  • 2-3 inches neutral oil vegetable or canola oil recommended
Coating
  • 3 cups frozen French fries chopped into ⅓-inch pieces
  • 1 cup panko breadcrumbs

Method
 

Procedure
  1. Combine the flour, yeast, sugar, and salt in a bowl. Gradually mix in water until smooth. Cover and let rest for 1 hour.
  2. Thread mozzarella sticks and hot dogs onto skewers, alternating between them.
  3. Chop frozen French fries and prepare a shallow dish of panko breadcrumbs.
  4. Dip skewers in batter, then roll in French fries and coat with panko breadcrumbs.
  5. Heat oil to 375°F and fry corn dogs for 2-3 minutes on each side until golden brown. Drain and sprinkle with sugar.
