- In a stand mixer, combine 4 cups of all-purpose flour, 2 tablespoons of sugar, 1 packet of instant yeast, 1 teaspoon of salt, 1 cup of warm milk, and 4 tablespoons of melted butter. Mix on medium speed for about 4-5 minutes until the dough is smooth and elastic, adjusting with more flour or milk if necessary.
- Cover the bowl with a clean kitchen towel or plastic wrap. Allow it to rise in a warm place for 30-60 minutes or until it has doubled in size.
- Preheat your oven to 450°F (230°C) and prepare a baking sheet lined with parchment paper. Once the dough has risen, turn it out onto a lightly floured surface. Divide the dough into 12 equal pieces, roll each piece into a rope about 12 inches long, and cut them into 1-2 inch pieces to form your pretzel bites.
- In a large pot, bring 8 cups of water to a boil, then carefully add ½ cup of baking soda. Gently place the pretzel bites into the water, boiling each batch for about 30 seconds. Remove them using a slotted spoon and transfer them to the prepared baking sheets.
- Prepare a simple egg wash by beating one egg in a small bowl. Brush the tops of each pretzel bite with the egg wash, sprinkle with coarse sea salt and bake for 12-14 minutes until golden brown.
