Preparation Steps
- Preheat your oven to 350°F (175°C) and grease an 8-inch baking pan or line it with parchment paper.
- In a large mixing bowl, combine the quick oats, your chosen flour, ground cinnamon, baking powder, salt, and sugar. Stir until well mixed.
- Pour in the oil or melted butter, mixing until the ingredients are moistened and form a crumbly dough. Reserve about 2/3 of this mixture.
- Press the reserved 2/3 of the oat mixture into the bottom of your prepared baking pan to form the crust.
- In a separate medium bowl, combine the diced strawberries with cornstarch and maple syrup. Mix gently until the strawberries are well-coated.
- Spread the strawberry filling evenly over the pressed dough in the pan.
- Sprinkle the reserved oat mixture on top of the strawberry layer and press down gently.
- Bake for about 45 minutes, until golden brown. Allow to cool in the pan.
- Let the bars cool in the pan for a while before transferring them to the refrigerator to chill.
- After a couple of hours, slice your Strawberry Oatmeal Bars and serve them chilled or at room temperature.
