For the Strawberry Filling
  • 2 cups Diced Strawberries The star of the show! You can use fresh or thawed frozen strawberries, but avoid freeze-dried for this filling.
  • 2 tablespoons Cornstarch or Arrowroot Thickens the strawberry filling and is necessary when using fresh fruit.
  • 1/4 cup Maple Syrup or Sweetener of Choice Adds additional sweetness to the filling; adjust according to your preference.

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and grease an 8-inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, combine the quick oats, your chosen flour, ground cinnamon, baking powder, salt, and sugar. Stir until well mixed.
  3. Pour in the oil or melted butter, mixing until the ingredients are moistened and form a crumbly dough. Reserve about 2/3 of this mixture.
  4. Press the reserved 2/3 of the oat mixture into the bottom of your prepared baking pan to form the crust.
  5. In a separate medium bowl, combine the diced strawberries with cornstarch and maple syrup. Mix gently until the strawberries are well-coated.
  6. Spread the strawberry filling evenly over the pressed dough in the pan.
  7. Sprinkle the reserved oat mixture on top of the strawberry layer and press down gently.
  8. Bake for about 45 minutes, until golden brown. Allow to cool in the pan.
  9. Let the bars cool in the pan for a while before transferring them to the refrigerator to chill.
  10. After a couple of hours, slice your Strawberry Oatmeal Bars and serve them chilled or at room temperature.
