Step‑by‑Step Instructions for Smoked Salmon Bagel
  1. Slice the red onion thinly and place it in a bowl. Pour in the red wine vinegar and sprinkle with sugar, stirring until well combined. Let the onions marinate for at least 10 minutes.
  2. In a mixing bowl, combine the cream cheese, freshly chopped dill, lemon juice, salt, and pepper. Blend until smooth and creamy.
  3. Heat a skillet over medium heat and add a drizzle of olive oil. Sauté asparagus for about 2 minutes per side until tender yet crunchy. Set aside.
  4. Reduce heat to low, melt butter in the skillet, crack the eggs into a bowl, whisk, and pour into the pan. Cook gently until set, about 3-4 minutes.
  5. Split the sesame bagel, spread dill cream cheese on each side, sprinkle with Parmesan if desired. Broil for about 3 minutes until golden.
  6. Layer the toasted bagel with sautéed asparagus, scrambled eggs, and smoked salmon. Top with pickled onions and serve.
