For the Apple Filling

  • 3 cups Sweet-tart Baking Apples (Honeycrisp or Pink Lady) Use other varieties based on taste preferences.

Method
 

Preparation Steps
  1. In a large mixing bowl, combine your gluten-free flour blend, guar gum (if using), salt, and sugar. Mix thoroughly and set aside.
  2. Heat your milk in a saucepan until about 110°F and stir in the active dry yeast. Let sit for 5-10 minutes until frothy.
  3. Add melted butter and eggs to the dry mixture, then pour in the frothy yeast mixture. Mix until a cohesive dough forms. Cover and let rise for about 1 hour until doubled in size.
  4. Melt unsalted butter in a skillet over medium heat. Add diced apples, sugar, cinnamon, and salt. Sauté for about 10 minutes until caramelized. Remove from heat and cool slightly.
  5. Roll the risen dough to ½ inch thick, spread apple filling on top, fold dough, and cut into desired shapes. Let rise for another 20 minutes.
  6. Heat peanut oil to 350°F. Fry fritters for 1-2 minutes on each side until golden brown. Transfer to paper towels.
  7. Mix powdered sugar with a splash of vanilla and enough warm water for icing. Drizzle on warm fritters.
