Steps
- Start by placing around 15 pitted Medjool dates into a food processor. Pulse the dates for about 30 seconds, or until they form a sticky paste.
- Once the date paste is ready, scoop out small portions with your hands, roughly the size of a tablespoon. Roll each portion into a ball.
- Prepare a plate with unsweetened shredded coconut on it. Take each date ball and gently roll it in the shredded coconut.
- If you're using almonds, gently press one almond into the top of each coconut-covered ball.
- Arrange the Coconut Date Rolls on a serving plate. You can enjoy them immediately or refrigerate them for about 30 minutes.
