Steps
  1. Start by placing around 15 pitted Medjool dates into a food processor. Pulse the dates for about 30 seconds, or until they form a sticky paste.
  2. Once the date paste is ready, scoop out small portions with your hands, roughly the size of a tablespoon. Roll each portion into a ball.
  3. Prepare a plate with unsweetened shredded coconut on it. Take each date ball and gently roll it in the shredded coconut.
  4. If you're using almonds, gently press one almond into the top of each coconut-covered ball.
  5. Arrange the Coconut Date Rolls on a serving plate. You can enjoy them immediately or refrigerate them for about 30 minutes.
