  • 2 tbsp Olive Oil Or substitute half with melted butter
For the Flavor
  • 4 cloves Garlic Minced, or substitute with 1/2 tsp garlic powder
  • 1/2 cup Parmesan Cheese Grated
  • 1 tsp Dried Thyme
  • to taste Salt
  • to taste Black Pepper
For Garnish
  • 1/4 cup Fresh Parsley Optional, for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and halve the sweet potatoes lengthwise, scooping out a small amount of flesh to create wells.
  3. Mix olive oil, minced garlic, Parmesan, thyme, salt, and pepper in a bowl for the topping.
  4. Generously brush the topping mixture onto the cut sides of the sweet potatoes and place cut-side up on the baking sheet.
  5. Roast in the preheated oven for 30-40 minutes until tender.
  6. Wrap reserved garlic in foil and roast alongside sweet potatoes for the last 10 minutes.
  7. Once done, mash the roasted garlic and spread on sweet potatoes, garnish with parsley, and serve hot.
