- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and halve the sweet potatoes lengthwise, scooping out a small amount of flesh to create wells.
- Mix olive oil, minced garlic, Parmesan, thyme, salt, and pepper in a bowl for the topping.
- Generously brush the topping mixture onto the cut sides of the sweet potatoes and place cut-side up on the baking sheet.
- Roast in the preheated oven for 30-40 minutes until tender.
- Wrap reserved garlic in foil and roast alongside sweet potatoes for the last 10 minutes.
- Once done, mash the roasted garlic and spread on sweet potatoes, garnish with parsley, and serve hot.
