Cooking Steps
- Preheat a large griddle or non-stick frying pan over low-medium heat for about 5 minutes.
- In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, and sugar until there are no lumps.
- In a separate bowl, whisk together Greek yogurt, milk, vanilla extract, and eggs until smooth and creamy.
- Gently fold the wet mixture into the dry ingredients until just combined; do not overmix.
- Carefully fold in blueberries, making sure not to smash them.
- Lightly grease the griddle with oil or non-stick spray.
- Pour approximately ¼ cup of batter onto the preheated griddle for each pancake. Cook for 2-3 minutes until bubbles form.
- Once golden brown on the bottom, flip pancake and continue cooking for another 2-3 minutes.
- Serve warm topped with additional blueberries, maple syrup, or whipped cream.
