Method
 

Cooking Instructions
  1. In a large mixing bowl, combine 1 cup of cottage cheese, 2 eggs, 1 teaspoon of vanilla extract, and 2 tablespoons of sugar. Mix until well blended and smooth. Gradually add in 1 teaspoon of baking powder and ½ cup of flour, stirring until just combined.
  2. Place a non-stick skillet over medium heat and add 2 tablespoons of canola oil. Heat for 2-3 minutes until shimmering.
  3. Using a large cookie scoop, pour approximately 3 tablespoons of batter onto the skillet for each pancake. Cook for about 3-4 minutes until edges set and bubbles form.
  4. Gently flip each pancake and cook for an additional 3-4 minutes until golden brown.
  5. Remove pancakes from the skillet and serve immediately with warm maple syrup, fresh berries, or yogurt.
