Step-by-Step Instructions
  1. Thaw puff pastry in the refrigerator overnight or at room temperature for about 40 minutes.
  2. Preheat your oven to 400°F (200°C).
  3. Whisk together one egg with a splash of water to create an egg wash.
  4. In a bowl, combine eggs, feta, spinach, onion, parsley, and black pepper and mix well.
  5. Roll each puff pastry sheet into a 12-inch square and cut into 16 smaller squares.
  6. Fill each square with about one tablespoon of filling, brush edges with egg wash, and fold to seal.
