Preparation Steps

  2. Trim the tops and bottoms of zucchinis, then hollow them out carefully.
  3. Mix olive oil and oregano, brush this mixture inside the zucchinis, and season with salt and pepper.
  4. Bake zucchinis for 12-15 minutes until slightly softened.
  5. Combine feta, Gruyere, Greek yogurt, spring onion, garlic powder, lemon zest, parsley, olive oil, and pepper in a mixing bowl.
  6. Stuff the zucchinis with the filling, drizzle with olive oil, and sprinkle with oregano before baking.
  7. Lower the oven temperature to 180°C (356°F) and bake for an additional 30 minutes until golden brown.
  8. Serve warm or cold, optionally drizzled with more olive oil.
