Preparation Steps
- Preheat your oven to 200°C (390°F) and prepare your baking dish.
- Trim the tops and bottoms of zucchinis, then hollow them out carefully.
- Mix olive oil and oregano, brush this mixture inside the zucchinis, and season with salt and pepper.
- Bake zucchinis for 12-15 minutes until slightly softened.
- Combine feta, Gruyere, Greek yogurt, spring onion, garlic powder, lemon zest, parsley, olive oil, and pepper in a mixing bowl.
- Stuff the zucchinis with the filling, drizzle with olive oil, and sprinkle with oregano before baking.
- Lower the oven temperature to 180°C (356°F) and bake for an additional 30 minutes until golden brown.
- Serve warm or cold, optionally drizzled with more olive oil.
