Ingredients
  

  • 2 slices Bread of Choice Use whole grain, sourdough, or gluten-free.
  • 1 tbsp Butter Adds richness and a crispy finish.
  • 2 tbsp Pesto Store-bought or homemade.
  • 1 oz Mozzarella Cheese, sliced Can use provolone or gouda.
  • 3.5 oz Roasted Turkey Breast, sliced Alternatives: chicken or vegetarian slices.
  • 0.25 cup Fresh Spinach Can substitute with kale or arugula.
  • 2 slices Fresh Tomato Heirloom or cherry tomatoes recommended.

Method
 

  1. Prepare a large skillet over medium heat for about 2 minutes.
  2. Spread butter on one side of each slice of bread. Place one slice, buttered side down, in the skillet. Spread pesto on the bread, add mozzarella and turkey, then top with second slice, buttered side up.
  3. Cook the sandwich in the skillet for approximately 3-4 minutes until golden brown and cheese begins to melt. Cover skillet with a lid for the last minute to help the cheese melt.
  4. Layer fresh spinach and tomato slices on the sandwich. Gently press down and cook for an additional minute until cheese is fully melted.
  5. Remove sandwich from skillet, slice in half, and serve warm.
