Preparation Steps
- Preheat your oven to 350°F (175°C).
- Grease a 9x13-inch casserole dish with cooking spray or avocado oil.
- In a large saucepan, heat 2 tablespoons of avocado oil and sauté 1 chopped onion, 1 chopped green pepper, and 2 cups of diced sweet potatoes for 8-9 minutes, until tender.
- Add 2 minced garlic cloves during the last minute and stir.
- Transfer vegetables to the casserole dish.
- In the same saucepan, cook 1 pound of turkey sausage until browned, about 5-7 minutes, and drain excess grease.
- Combine sausage with the sautéed vegetables in the casserole dish.
- In a bowl, whisk together 6 eggs, 1 cup of milk, 1 tablespoon of fresh thyme (or 1 teaspoon dried), salt and pepper.
- Pour the egg mixture over the sausage and vegetable layers, gently stir to combine.
- Bake in the preheated oven for 40-45 minutes until the center is firm and set.
- Let cool for 5-10 minutes before slicing and serving.
