Casserole Base
  • 3 cups sweet potatoes (diced) Opt for Garnet or Jewel varieties for best results.
  • 6 large eggs Whisk gently to avoid a tough texture.
  • 1 cup milk Can be substituted with any non-dairy milk.
  • 1 pound turkey sausage Ground pork or chicken can be alternatives.
  • 1 onion (chopped) Shallots are a milder substitute that works well.
  • 1 green pepper (chopped) Any bell pepper can do, but red adds sweetness.
  • 2 cloves garlic (minced) Fresh minced garlic is ideal for the best taste.
  • 1 tablespoon fresh thyme Dried thyme can replace it, but use less.
  • 1 cup cheese (shredded) Cheddar or Monterey Jack are excellent choices.
  • 2 tablespoons avocado oil Used for sautéing; olive oil is a good substitute.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x13-inch casserole dish with cooking spray or avocado oil.
  3. In a large saucepan, heat 2 tablespoons of avocado oil and sauté 1 chopped onion, 1 chopped green pepper, and 2 cups of diced sweet potatoes for 8-9 minutes, until tender.
  4. Add 2 minced garlic cloves during the last minute and stir.
  5. Transfer vegetables to the casserole dish.
  6. In the same saucepan, cook 1 pound of turkey sausage until browned, about 5-7 minutes, and drain excess grease.
  7. Combine sausage with the sautéed vegetables in the casserole dish.
  8. In a bowl, whisk together 6 eggs, 1 cup of milk, 1 tablespoon of fresh thyme (or 1 teaspoon dried), salt and pepper.
  9. Pour the egg mixture over the sausage and vegetable layers, gently stir to combine.
  10. Bake in the preheated oven for 40-45 minutes until the center is firm and set.
  11. Let cool for 5-10 minutes before slicing and serving.
