  • 1 medium Red Bell Pepper optional, chopped
  • 3 cloves Garlic minced
  • 1 quarter cup Soy Sauce or Tamari
  • 2 tablespoons Oyster Sauce optional
  • 1 tablespoon Honey or Brown Sugar
  • 1 tablespoon Sesame Oil or Olive Oil
  • 2 tablespoons Vegetable Oil for frying
  • to taste Salt
  • to taste Pepper
For Garnishing
  • 1 tablespoon Sesame Seeds
  • 2 stalks Green Onions chopped

Method
 

Step-by-Step Instructions for Chicken Zucchini Stir Fry
  1. Slice the chicken breast into thin strips, chop the zucchini and any additional vegetables, and mince the garlic.
  2. In a bowl, whisk together the soy sauce, oyster sauce (if using), honey, and sesame oil.
  3. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the sliced chicken and season with salt and pepper. Stir-fry for 5-6 minutes until cooked through.
  4. Remove the cooked chicken from the skillet and set aside.
  5. In the same skillet, add another tablespoon of oil and then the chopped zucchini and bell pepper. Stir-fry for 3-4 minutes.
  6. Add the minced garlic and stir for an additional 30 seconds.
  7. Return the chicken to the skillet, add the sauce, and toss everything together. Cook for 1-2 minutes more.
  8. Transfer to a serving platter, garnish with sesame seeds and green onions, and serve.
