For the Roll-Ups
  • 1 can Cooking Spray or olive oil as a substitute
  • 12 oz Dried Lasagna Noodles ensure they are not no-boil varieties
  • 1 lb Lean Ground Beef can swap with ground turkey or plant-based meat
  • 1 medium Yellow Onion shallots make a great milder substitute
  • 2 cloves Garlic fresh garlic is preferred
For the Cheese Filling
  • 15 oz Whole-Milk Ricotta Cheese cottage cheese can be used as a lighter option
  • 8 oz Low-Moisture Mozzarella Cheese or fresh mozzarella
  • 1/2 cup Parmesan Cheese Grana Padano can be used
  • 1 large Egg consider a flax egg for a vegan alternative
For the Sauce
  • 24 oz Marinara Sauce use homemade or favorite store-bought
  • 1 tbsp Dried Italian Seasoning or fresh herbs at a 3:1 ratio
  • 1 tsp Kosher Salt table salt can substitute
  • 1/2 tsp Freshly Ground Black Pepper
  • 2 tbsp Olive Oil for sautéing the onions

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and generously spray a large baking dish with cooking spray.
  2. Bring a large pot of salted water to a boil, add the dried lasagna noodles and cook for about 7 minutes.
  3. In a large skillet, heat olive oil and sauté diced onions, kosher salt, dried Italian seasoning, and black pepper for 4-5 minutes.
  4. Stir in minced garlic and cook for another minute, then add ground beef and brown until fully cooked.
  5. Mix in marinara sauce and remove from heat.
  6. In a bowl, combine ricotta cheese, egg, remaining kosher salt, half of mozzarella, and half of parmesan, stirring until creamy.
  7. Spread meat sauce on the bottom of the baking dish, fill noodles with ricotta mixture and meat sauce, rolling tightly.
  8. Pour remaining meat sauce over the rolls and sprinkle with remaining mozzarella and parmesan.
  9. Cover with foil and bake for 10 minutes, then uncover and bake for an additional 15-20 minutes until bubbling.
  10. Let cool for a few minutes before serving cut into individual servings.
