Step-by-Step Instructions
  1. In a blender, combine avocado, basil, nutritional yeast, lemon juice, and a pinch of salt. Blend until smooth and creamy. Set aside.
  2. Mash the drained chickpeas in a mixing bowl until desired texture is reached.
  3. Finely chop the green cabbage, jalapeño, and other vegetables. Mix into the mashed chickpeas.
  4. Pour the dressing over the chickpea and vegetable mixture and toss gently until coated.
  5. Spread hummus or mustard on one slice of bread, add spinach and a scoop of the chickpea mixture, then top with another slice of bread.
  6. Slice the sandwich in half diagonally and serve with fresh fruit or vegetable sticks.
