Ingredients
  

For the Meatballs
  • 1 pound Ground Turkey Can substitute with chicken or pork.
  • 1 pound Ground Turkey Sausage Can substitute with beef or lamb.
  • 1 large Egg Can use flax egg for vegan.
  • 1 cup Almond Flour Substitute with coconut flour if needed.
  • 1 cup Diced Red Onion Can substitute with green onions or shallots.
  • 1 cup Freshly Chopped Parsley Can add chopped mint as well.
  • 1 cup Freshly Chopped Mint Can be replaced with dill.
  • 2 tablespoons Coconut Aminos or Soy Sauce Tamari can be used for gluten-free.
For the Roasted Red Pepper Sauce
  • 2 large Red Bell Peppers Roasted for sweetness.
  • 2 tablespoons Olive Oil or Avocado Oil Any cooking oil can be used.
  • 2 tablespoons Red Wine Vinegar Can use apple cider vinegar.
  • 2 cloves Garlic Minced fresh preferred.
  • 1 teaspoon Sea Salt Adjust to taste.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) for roasting the red bell peppers.
  2. Cut the red bell peppers in half, remove seeds and stems, drizzle with olive oil, and roast for about 20 minutes.
  3. Lower oven temperature to 375°F (190°C) after peppers are roasted.
  4. In a mixing bowl, combine ground turkey, sausage, egg, almond flour, salt, diced onion, coconut aminos, parsley, and mint.
  5. Scoop out and form meatballs into 1.5-inch balls and place on a lined baking sheet.
  6. Bake the meatballs for about 20 minutes until cooked through and golden.
  7. Blend roasted peppers, olive oil, red wine vinegar, sea salt, and garlic in a blender until smooth.
  8. Serve the meatballs with the roasted red pepper sauce drizzled on top.
