- Preheat a large mixing bowl and combine shredded chicken, cream cheese, buffalo sauce, and shredded cheddar cheese. Mix until well combined.
- Heat a dry skillet over medium-low heat and warm each tortilla for 15–20 seconds on each side until soft.
- Spoon 2 tablespoons of filling onto each tortilla, roll tightly and place seam-side down on a baking sheet.
- Fry taquitos in a skillet with heated olive oil for 1–2 minutes per side until golden brown.
- Mix sour cream with your choice of dressing and chives in a small bowl for dipping.
- Remove fried taquitos from skillet and drain on paper towels. Serve warm with dip.
