Preparation Steps
- Preheat oven to 425°F (220°C). Boil whole carrots in salted water for about 10 minutes until fork-tender. Drain and let cool.
- Gently smash each carrot to a flat shape and arrange on a parchment-lined baking sheet.
- Drizzle carrots with olive oil, then sprinkle garlic powder, smoked paprika, salt, and pepper. Top with Parmesan cheese.
- Roast in preheated oven for 20-25 minutes until golden brown and crispy. Flip halfway through.
- Let sit for a minute after removing from the oven and serve warm.
