  • 1 lb Carrots Vibrant and firm
  • 2 tbsp Olive Oil For brushing
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper Freshly ground
  • 1 tsp Smoked Paprika

Method
 

Preparation Steps
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and peel the carrots. Cut them into 2-3 inch pieces.
  3. In a large pot, bring water to boil and cook carrot pieces for 10-12 minutes until fork-tender.
  4. Drain the carrots and let cool for a couple of minutes.
  5. Smash each carrot piece until flattened but still intact.
  6. Mix olive oil, garlic powder, salt, black pepper, and smoked paprika in a small bowl.
  7. Brush the mixture over the smashed carrots and arrange on the baking sheet.
  8. Bake for 20-25 minutes, flipping halfway through until golden brown.
  9. Let cool slightly before serving warm as a snack or side dish.
