Preparation Steps
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and peel the carrots. Cut them into 2-3 inch pieces.
- In a large pot, bring water to boil and cook carrot pieces for 10-12 minutes until fork-tender.
- Drain the carrots and let cool for a couple of minutes.
- Smash each carrot piece until flattened but still intact.
- Mix olive oil, garlic powder, salt, black pepper, and smoked paprika in a small bowl.
- Brush the mixture over the smashed carrots and arrange on the baking sheet.
- Bake for 20-25 minutes, flipping halfway through until golden brown.
- Let cool slightly before serving warm as a snack or side dish.
