  • 2 cups Salmon Fresh or canned
  • 2 medium Potatoes Russet or Yukon Gold
  • 1 cup Breadcrumbs Gluten-free if needed
  • 1 large Egg Alternatively, use flaxseed egg
  • 1 teaspoon Garlic powder Or other spices as desired
  • 1 teaspoon Dill Or other spices as desired
For the Creamy Avocado Sauce
  • 1 ripe Avocado Can substitute with Greek yogurt
  • 2 tablespoons Lemon Juice Fresh or bottled
  • to taste Salt
  • to taste Pepper

Method
 

Step‑by‑Step Instructions
  1. Wash and peel potatoes; boil in salted water for 15-20 minutes until fork-tender.
  2. Flake salmon into a mixing bowl and drain and mash the soft potatoes until smooth.
  3. In the bowl, mix flaked salmon, mashed potatoes, breadcrumbs, egg, and spices until combined.
  4. Roll portions of the mixture into small balls and place them on a tray.
  5. Preheat oven to 400°F (200°C) before shaping the mixture.
  6. Bake salmon balls on a parchment-lined baking sheet for 25 minutes until golden brown.
  7. In a blender, combine avocado, lemon juice, salt, and pepper; blend until smooth.
  8. Once baked, cool slightly and serve with avocado sauce drizzled or on the side.
