- Preheat your oven to 375°F (190°C).
- Melt unsalted butter and mix with extra-virgin olive oil in a small bowl.
- Brush the bottom of a 9-inch round baking dish with the butter-oil mixture.
- Thinly slice russet potatoes aiming for 1/8 inch thick.
- Layer the potato slices vertically in the baking dish, inserting shallots and sprinkling salt and red-pepper flakes.
- Bake for 1 hour and 15 minutes until edges are golden.
- After 1 hour, sprinkle fresh thyme sprigs and bake for an additional 35 minutes.
