- Preheat the oven to 400°F (200°C). Prepare your workspace and gather all necessary ingredients and equipment.
- In a large mixing bowl, combine the cold leftover mashed potatoes, shredded cheddar cheese, lightly beaten eggs, all-purpose flour, salt, black pepper, and garlic powder. Stir until just combined.
- Shape the mixture into balls about the size of a ping pong ball. Place the shaped puffs on a clean plate.
- Roll each potato ball in breadcrumbs until fully coated. Arrange the puffs back on the plate.
- Line a baking sheet with parchment paper and transfer the coated puffs, spacing them about an inch apart.
- Bake in the preheated oven for 20 to 25 minutes until golden brown.
- Remove from the oven and let cool slightly. Serve warm with dips.
