  1. Wash, peel, and grate the potatoes and onion into a large mixing bowl. Allow to sit for 5 minutes to drain excess liquid.
  2. Add salt, pepper, flour, and beaten egg to the bowl and mix thoroughly to create a consistent batter.
  3. Heat a large skillet over medium-high heat and add enough oil to coat the bottom about ¼ inch deep.
  4. Drop 2 tablespoons of batter into the hot oil, flatten slightly, and fry for 3-4 minutes per side until golden brown.
  5. Remove pancakes with a slotted spatula and drain on paper towels. Repeat until all batter is cooked.
  6. Serve hot with apple sauce for dessert or quark for an appetizer.
