Cooking Instructions
  1. Preheat a small skillet over medium heat for about 2 minutes. Spray with cooking oil.
  2. Crumble the feta cheese into the pan, covering the bottom. Cook for 2-3 minutes until golden brown.
  3. Carefully crack a large egg into the center of the melted feta and cook for 2-4 minutes.
  4. Sprinkle dried oregano and red pepper flakes over the egg while it cooks.
  5. Warm a tortilla or toast in another pan or microwave. Smash half an avocado on top and add lemon juice.
  6. Carefully slide the cooked egg and feta onto your prepared avocado base.
  7. Garnish with pickled onions and drizzle with chili oil if desired before serving.
