- Preheat a small skillet over medium heat for about 2 minutes. Spray with cooking oil.
- Crumble the feta cheese into the pan, covering the bottom. Cook for 2-3 minutes until golden brown.
- Carefully crack a large egg into the center of the melted feta and cook for 2-4 minutes.
- Sprinkle dried oregano and red pepper flakes over the egg while it cooks.
- Warm a tortilla or toast in another pan or microwave. Smash half an avocado on top and add lemon juice.
- Carefully slide the cooked egg and feta onto your prepared avocado base.
- Garnish with pickled onions and drizzle with chili oil if desired before serving.
