- Make Blueberry Compote: In a medium saucepan, combine blueberries, sugar, lemon juice, and thyme. Boil over medium-high heat, stir gently, then simmer for about 20 minutes until thickened. Remove thyme, let cool.
- Assemble Sandwiches: Spread blueberry compote on one side of each slice of bread. Stack white cheddar and mozzarella on top. Cap with another slice of bread, compote side down.
- Grill Sandwiches: Heat a skillet, melt butter. Grill sandwiches for 2-3 minutes on each side until golden brown and cheese melts. Adjust heat to prevent burning.
- Finish and Serve: Slice sandwiches in half. Optionally, sprinkle with sea salt and thyme before serving.
