For the Chocolate Coating
  • 1 cup chocolate chips preferably dairy-free
  • 1 tablespoon coconut oil for smooth melting consistency

Method
 

Preparation
  1. Combine the base ingredients: In a medium mixing bowl, combine coconut yogurt, cashew butter, vanilla extract, and maple syrup until smooth.
  2. Stir in chocolate chips: Gently fold in mini chocolate chips until evenly distributed.
  3. Prepare the baking sheet: Line a baking sheet with parchment paper and drop dollops of the yogurt mixture onto the sheet.
  4. Freeze the bites: Place the baking sheet in the freezer for at least 1 hour until solid.
  5. Melt the chocolate coating: Combine chocolate chips and coconut oil, and heat until melted and smooth.
  6. Dip the bites in chocolate: Dip each frozen yogurt bite into the melted chocolate, then return to the baking sheet.
  7. Freeze again to set: Place the baking sheet back into the freezer for another 30 minutes.
  8. Enjoy or store: Enjoy immediately or store bites in an airtight container in the freezer for up to 2 months.
