  3. Whisk the soured milk mixture, 1 egg, and 2 tablespoons of melted butter in another bowl until well blended.
  4. Pour the wet ingredients into the dry mixture and gently whisk until just combined; some lumps are okay.
  5. In a small bowl, mix together 2 tablespoons of melted butter, 1/4 cup of brown sugar, 1 teaspoon of cinnamon, and 1 tablespoon of flour to form a thick paste for the swirl.
  6. Preheat a non-stick griddle or skillet over medium heat and lightly grease it.
  7. Scoop about 1/4 cup of pancake batter onto the hot griddle and drizzle a spoonful of the cinnamon swirl mixture on top.
