  • 1/2 cup unsalted butter melted
  • 1/4 cup honey
  • 1 cup buttermilk
  • 2 large eggs
  • 1 cup all-purpose flour or gluten-free flour
  • 1/2 cup cornmeal
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
For the Cinnamon Honey Butter
  • 1/2 cup softened butter at room temperature
  • 1/4 cup honey
  • 1 teaspoon cinnamon

Preparation Steps
  1. Preheat your oven to 400°F (204°C) and grease a 9x9 inch baking dish.
  2. In a large mixing bowl, combine the mashed sweet potatoes, melted butter, honey, buttermilk, and eggs. Mix until smooth.
  3. In a separate bowl, sift together flour, cornmeal, baking powder, cinnamon, salt, and nutmeg.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into the greased baking dish and spread evenly.
  6. Bake for 25-30 minutes until golden and a toothpick comes out clean.
  7. While baking, mix softened butter, honey, and cinnamon for the cinnamon honey butter.
  8. Allow the cornbread to cool for a few minutes before slicing into squares.
