Method
 

Pancake Preparation
  1. Whisk together all-purpose flour, sugar, ground cinnamon, baking powder, and salt in a large mixing bowl.
  2. In another bowl, mix buttermilk, egg, vegetable oil, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and fold gently until just combined. Let the batter rest for 5 minutes.
  4. Preheat a nonstick skillet over medium heat and add a drizzle of oil or a pat of butter.
  5. Pour a scant ¼ cup of batter for each pancake and cook until bubbles form, about 2 minutes.
  6. Flip each pancake and cook for an additional 30 seconds to 1 minute until golden brown.
  7. In a small bowl, combine granulated sugar with ground cinnamon for the topping.
  8. Brush warm pancakes with melted butter and coat in cinnamon sugar.
  9. Serve warm, drizzled with chocolate sauce or condensed milk.
